The Perfect Refreshing Lemon Cake or Muffins

This is the perfect recepie for a fresh and tasty lemon cake! It combines natural lemon flavour with a hint of vanilla flavour. You will be surprised how refreshing cake can taste! Because of the freshly-squeezed juice in it the cake is immense moist!

The recepie is perfect for 12 muffins or a middle sized cake:

INGREDIENTS:

120g whole wheat flour

140g all purpose flour (or whole wheat as well if you want to keep it a bit healthier)

2 TSP baking powder

1/2 TSP baking soda

1 TSP pure vanilla extract

zest of 1 lemon (organic)

zest of 1 lime or orange (organic)

1 large egg

140g sugar (or sweetener suitable for baking purposes)

80 ml tasteless oil

250g buttermilk (for very fluffy muffins), normal milk

And: 50ml freshly-squeezed lemon juice

60ml freshly-sqeezed lime or orange juice

2-3 TBSP Sugar

some powdered sugar or lemon glace (100g powdered sugar combined with 1-2 TBSP juice or water)

INTRODUCTIONS:

Preheat your oven to 180°C. Prepare a muffin tray or use muffin liners. Mix both flours, baking powder, baking soda and zest. In a seperate bowl whisk your egg and then add oil, sugar, buttermilk and whisk again. Add your dry ingredients and stir just to combine all ingredients (don't overmix, try to fold in the dry ingredients in a movement like an 8). Bake your muffins for 20-25 minutes. In the meantime warm up your juice until you can melt it in the sugar in the juice. After baking prick some holes in each muffin with a toothpick or so and pour the juice mixture over your still warm muffins. Let them cool, sprinkle some powdered sugar or a glaze on top and ENJOY!
