Bear Pancakes

Do you want to serve a beautiful breakfast that your children will absolutely love? Or are you looking for special ideas to surprise your brunch guests? Than you need to try my cute bear pancakes! They are very fluffy, soft, sweeet and topped with fresh berries. Served with maple sirup or whipped cream your breakfast is perfect!
The recepie is perfect for 8 bears:
INGREDIENTS:
250g flour of choice
1 TSP baking powder
1/4 TSP baking soda
1/4 TSP salt
1 TSP pure vanilla extract
3 TBL sugar or sweetener of choice.
450 ml butermilk or milk (lactose free or nutmilk if you need)
4 TBL sparkling water
2 TBL butter (melted, cooled)
2 large or 3 medium eggs
for decoration: berries, chocolate chips, topping of choice
INTRODUCTIONS:
Combine all dry ingredients (except sugar). In a seperate bowl mix butter, eggs, sugar and vanilla extract with a whisk until they are well combined. Add milk and water and gently mix them in. Then carefully add your dry ingredients and mix just until all ingredients are nice combined (don't overmix it!). Let the dough sit for about 30 minutes. Preheat your pan on medium heat and cover the top with some non-stick spray, oil or melted butter. Place a medium sized pancake (face) and two smaller ones (ears) in your pan. Make sure they really stick together. Bake until the dough thickens, flip them very carefully and bake for another 2-3 minutes until golden browm. You can hold the pancakes warm in your oven at 80°C until all pancakes are ready to be served. BUt please don't let them sit in the oven for too long because they can get too dry. Decorate your pancakes with berries, chocolate chips, etc. and give them eyes, nose and mouth. Serve with a topping of choice and ENJOY!
TIP: I like to serve my pancakes with maple syrup and a curd cheese (quark) topping. For this topping mix 250g curd cheese, 4 TBL cream cheese, 3 TBL brown sugar, 1 TSP pure vanilla extract and 2 TSP lime/ lemon zest together. Alternative you can replace the curd chese with mascarpone.
