Healthy Banana Cake

Do you love cakes but don't want to eat an unhealthy one packed with sugar? Then this healthy banana cake will surprise you with it's sweetness and deliciousness. Give it a try!

INGREDIENTS:

2 large very ripe bananas (already with brown sprinkels on top)

1 large egg (or 2 egg whites)

250g of curd cheese (Quark), greek yoghurt

100g healthy flour (I used whole wheat)

1 TBL brown sugar

1 TSP of baking powder

1 TSP of baking soda (German: Natron)

30g chopped walnuts

20g chocolate chips

1 TSP of cinnamon

1 TSP pure vanilla extract

a pinch of nutmeg

INTRODUCTIONS:

Preheat your oven to 180°C (350°F) top/bottom heat. Mash your bananas in a blender or with a fork. Mix in your egg and curd cheese and whisk to combine. Add your brown sugar, vanilla extract, cinnamon and nutmeg. In a seperate bowl combine all dry ingredients (nuts, chocolate, flour, baking soda, baking powder) very well. Add the dry ingredients to your banana mixture and whisk just to make sure all ingredients are combined. Bake in a cake tin of choice (180°C) for about 50-60 minutes until golden brown. Let it cool for at least 30 minutes and ENJOY!
