PINK Summer Soup

Looking for a refreshing lunch? I don't want to eat hot meals on hot summer days. So I created a cold PINK super refreshing summer soup! It is totally guilt free and healthy, low calorie, high protein... And here is the recepie!

INGREDIENS:

~300g beetroot (Rote Beete, eingelegt) 1/2-1 cucumber (Gurke) 200-300g buttermilk (Buttermilch) 1-2 fresh green onions, chobbed (Frühlingszwiebeln, gehackt) (Maybe water or normal milk for the right consistency) A bit of dill, pepper, salt Fresh Basil

INTRODUCTION:

1⃣ Mix buttermilk, dill, pepper, salt, basil, (milk/water) togehter in a bowl. 2⃣ Bring your cucumber into small slices. Mix them with onions into the buttermilk mixture. 3⃣ Add your beetroot and but the soup in your fridge until it is cool and chilled! 4⃣ Serve with bread or potatoes and enjoy! I really recommand to try this summer snack! It helps you to cool down!
